Pops Diff's Chicken

Growing up my siblings and I always got excited about the nights where our Dad would fire up the grill and make some magic happen. As I've gotten older I've been trying to master the marinade that makes his chicken so dang good. I think I'm getting closer. Khale always gets excited when I tell him I'm making Pops Diff style grilled chicken. And he came from a house where his parents are really good cooks so it takes a lot to impress him. Seriously.

P.Diffy Grilled Chicken
4 chicken breasts
5 tsp olive oil
1 1/2 tsp garlic powder
1/2 tsp dried basil
1/2 tsp chili powder
1/2 tsp paprika
A light sprinkling of salt (too much can make chicken get dried out)
A few generous cranks on your black pepper shaker

Get your olive oil and spices mingling together while you rinse your chicken. Pat dry.

Smother them in the marinade. Toss chicken to coat thoroughly. Refrigerate for 20 min while you get the grill going.

Fire up the grill and lay the marinated chicken breasts on the rack. Cook for 30 min with the lid closed, or until just cooked through, flipping them after the first 15 min.

  1. I'll have to try that! I'll have to bake it though since we're not so good at "grilling" right now, I'll go ahead and blame it on our grill. :)
