It's all about meat and potatoes this time around. Actually, it was pretty much all about meat and potatoes last time around too. It often happens that way...maybe one day I'll cook something a little more girly. :)
4 large red potatoes, chopped.
Garlic (powder or minced)
1 1/2 lb. roast beef, cooked and shredded
1 4oz. can of diced green chilis
Bearnaise sauce (you can either make your own or cheat like I did and use one of those handy little McCormick packages)
Preheat the oven to 425. Place chopped potatoes in a large baking dish. Drizzle with olive oil. Sprinkle garlic, paprika, oregano, and rosemary onto potatoes. You can really just eyeball this and go with however much of these ingredients your taste buds prefer - which means that I completely forgot to measure anything...oops. Toss the potatoes so that the herbs and oil are well mixed in. Bake in the oven at 425 for 25 min or until golden and fork tender.
Stir the green chilis into the shredded beef. Toss in some salt and pepper to make it all even more delicious.
Mix up the Bearnaise sauce.
Once the potatoes are ready, pile them onto a plate, spoon the beef mixture on top, and drizzle with the Bearnaise sauce.
Trust me, it's delicious. :)
