Mini BBQ Meatloves

Why is it that when things are minaturized they automatically get about a million times cuter? It's one of life's great mysteries. :)

Anyhow, I love me some meatloaf but I often forget to start cooking dinner until about 45 min before we want to eat it. Meatloaf takes an ungodly amount of time to cook so I started making mini meatloaves to speed it up. And, well, like I said before, they're cute!

Mini BBQ Meatloaves
Serves about 6

2lbs. 80/20 ground beef. Using the higher fat stuff provides more flavor and keeps the meatloaf moist.
1/2 purple onion, diced
1 tsp. salt
2 tsp. black pepper
1/2 c. bbq sauce
3/4 c. bread crumbs
1 1/2 tsp. Tony Chachere's Original Creole Seasoning
2 tsp. garlic powder
1 egg
----> Combine all of the above ingredients in a mixing bowl. Shape into 12 mini loaves. Bake at 375 for 35-40 minutes or until no longer pink in the center. Drizzle with ketchup 10 minutes before removing the mini meatloaves from the oven.

Ingredients all getting happy together. I love the flavor BBQ sauce adds to the meat. It's good stuff.

Baked and ready to serve!
