Orange Cilantro Rice

A super quick and delicious side dish!

Orange Cilantro Rice
Serves 4-6

2 c. Brown Rice, cooked
1 Orange, zested and juiced
1/3 c. Salsa
1/4 c. Fresh Cilantro, chopped
Salt and Pepper

I like the way oranges look when sliced down the middle. It just makes me happy. :)

In my very unprofessional opinion, this is the best jarred salsa - ever. It comes really close to the straight out of the garden goodness you can only get in the summer.

In a large skillet, combine rice, orange juice, salsa, salt and pepper. Saute until heated through, tossing in cilantro 1 minute before removing rice from pan.

Sprinkle orange zest over the top of the rice and serve immediately.
