Spicy Salmon with Pomegranate Sauce

Friday night I made this for dinner. It was one of those things that I was just messing around with and turned out to be really good! The proof of it's goodness was when my husband, who normally only gets excited about a giant steak sitting in front of him, not only ate every single bite but also remarked several times about just how dang delicious it was.

Additional perk - this is insanely good for you with all the nutrients from the pomegranate seeds, salmon and spinach.

Spice Salmon with Pomegranate Sauce
Serves 4

3/4 c. Pomegranate Seeds
1/2 c. Water
4 tbsp. Sugar
----> Combine above ingredients in a sauce pan. Cook over medium heat until bubbling. Allow to maintain a soft boil for 5-7 minutes, or until sauce is thickened; adding more water as needed. Remove from heat.

4 Salmon filets
1/4 tsp. Salt
1/4 tsp. Garlic powder
1/2 tsp. Chili powder
1/4 tsp. Paprika
1/4 tsp. Onion powder
1/4 tsp. Dried basil
----> Combine spices; rub into salmon filets. Cook salmon in a few tbsp. olive oil in a large skillet. 3-5 minutes per side, depending on how well done you like your fish.

1 bag of Spinach
1/2 Purple onion, sliced
----> Saute spinach and onion in 1 tbsp. olive oil until spinach has wilted down and onion is starting to caramelize.

Pomegranate seeds, water, and sugar cooking away. You really don't want to cook them too terribly long or they will lose their bright color.

Combine spices together before rubbing on salmon.

The salmon's getting happy.

  2. Thanks! Walmart tends to have whole pomegranates this time of year in the produce section. They are a bit of a pain to get the seeds out of but totally worth it. :)
