Additional perk - this is insanely good for you with all the nutrients from the pomegranate seeds, salmon and spinach.
Spice Salmon with Pomegranate Sauce
3/4 c. Pomegranate Seeds
1/2 c. Water
4 tbsp. Sugar
----> Combine above ingredients in a sauce pan. Cook over medium heat until bubbling. Allow to maintain a soft boil for 5-7 minutes, or until sauce is thickened; adding more water as needed. Remove from heat.
4 Salmon filets
1/4 tsp. Salt
1/4 tsp. Garlic powder
1/2 tsp. Chili powder
1/4 tsp. Paprika
1/4 tsp. Onion powder
1/4 tsp. Dried basil
----> Combine spices; rub into salmon filets. Cook salmon in a few tbsp. olive oil in a large skillet. 3-5 minutes per side, depending on how well done you like your fish.
1 bag of Spinach
1/2 Purple onion, sliced
----> Saute spinach and onion in 1 tbsp. olive oil until spinach has wilted down and onion is starting to caramelize.
Pomegranate seeds, water, and sugar cooking away. You really don't want to cook them too terribly long or they will lose their bright color.
