Cheeseball Sleazeball

Allow me to introduce you to the demise of my Special K diet - a cheeseball. A scrumptious, creamy, demise that I totally enjoyed.

I'll have to get back on the bandwagon tomorrow, I suppose.

Btw, when I was growing up, my siblings and I often referred to cheeseballs as "cheeseball sleazeball." I'm not sure why we came up with that title but it still makes me smile.

First, we'll need one bar of cream cheese, softened.

More cheese! Finely grate both sharp cheddar and pepperjack cheese until you have 1 c. of each.

Please break out your grater and do this yourself instead of buying finely shredded cheese. The pre-shredded stuff in the store is coated with something to keep it from sticking together and therefore won't be able to meld together with the cream cheese very easily. And when it comes to these "sleazeballs," we want all the flavors to become BFF.

Now in a large bowl, combine your cream cheese, finely shredded cheeses, 1 tsp. dried cilantro, pinch of chili powder and a pinch of salt.

Lay a rectangle of plastic wrap on your counter. Plop the cheese mixture right into the middle of it.

Cover completely with plastic wrap and from the outside, form the cheese mixture into your desired shape. Generally a sphere. My brother-in-law was over to watch NFL playoffs with us so I made this one football shaped.

Chill for 1 hour.

Unwrap cheeseball and gently press chopped pecans into the top and sides.

Now you can either serve it or put it back into the fridge until you're ready to party.

I couldn't help myself. I softened a bit more cream cheese, put it in a pastry bag, and then piped that on the top of the "football." I have horrible piping skills but you get the idea of what I was trying to achieve, right? :)

 Cheeseball (printable recipe)
1 extra large cheeseball

8 oz. cream cheese, softened
1 c. finely grated sharp cheddar cheese
1 c. finely grated pepperjack cheese
1 tsp. dried cilantro
pinch chili powder
pinch salt
1/2 - 1 c. chopped pecan pieces

----> Place all ingredients, except pecan pieces, together in a bowl. Stir until all the cheeses and spices are well combined. Place a sheet of plastic wrap on the counter. Spoon cheese mixture into the center of the plastic wrap. Fold plastic wrap up until completely covering the cheese mixture; form into a ball shape. Chill for an hour. Remove plastic wrap and gently press pecan pieces into the top and sides of the ball. Serve immediately or return to the fridge until ready to use.
