My friend, Krista, makes these delicious cookies. She shared the recipe with me a while back (we're talking over two months ago) and I've been meaning to blog about them but somehow they keep getting bumped out of the way. Which is just wrong because these deserve some blogging love. They are simple, fast, delicious and make me happy.
Enough said, let's get to the cookies!
Chocolate Oatmeal-tastic Cookies (Printable Recipe)
Makes a couple dozen, depending on how large you make them!
1 1/2 c. organic sugar (Confession: both times I made these I used regular sugar but I do know that when Krista makes them with organic sugar, they turn out softer...I have no idea why)
1 c. butter, softened
1 tsp. baking soda
1/2 tsp. salt
2 c. flour
1 c. oats
1 c. raisins (try using craisins or chopped dates!)
1 c. chocolate chips
Cream together sugar and butter. Stir in baking soda and salt. Beat in egg. Stir in flour. Fold in oats raisins and chocolate chips until well combined.
Drop cookie dough onto an ungreased cookie sheet by the tablespoonful, about 2" apart.
Bake at 375 for 8 - 12 minutes, depending on your desired soft to crisp ratio.
