Cranberry Salad Dressing

If you've never tried to make salad dressing yourself, you don't know what you're missing. It is ridiculously easy and super fun because you can customize it to your preferences. My Mom makes a really yummy Ceasar dressing that I love and it doesn't require any raw eggs or anchovies...two things that completely disgust me. I'll have to share that recipe on here in the near future.

Today is all about cranberry salad dressing.



Now, I've been on a huge cranberry/pomegranate kick this Winter and it is showing no signs of slowing down. In fact, tomorrow's post will probably have craisins in it...and a little surprise so be sure and come back!

Back to the cooking - in a saucepan, bring 1 c. cranberry juice to a low boil. Maintain this, stirring every so often until the juice has thickened and reduced by half.


Like so.



Now whisk the juice together with mayo, brown mustard, olive oil and a bit of black pepper.

Don't let the brown mustard and cranberry juice combo freak you out...it works in some strange, yet magically delicious, way.


Make a salad using the dressing, lettuce, craisins, parmeasan (or feta) cheese. It'll be laden with anti-oxidants and refreshingly yummy all at the same time. Include my favorite homemade croutons for even more texture and flavor. I always have to make more of those croutons than I plan on using b/c I always end up eating 5-10 of them before they even hit the salad.


Cranberry Salad Dressing (Printable Recipe)
Does not refrigerate well so make it within an hour of when you want to serve your salad.

1 c. Cranberry juice (not the cranberry cocktail variety)
1 1/2 tbsp. mayo
1/2 tsp. brown mustard
1/4 c. olive oil
Few cranks of black pepper

In a saucepan, bring the cranberry juice to a low boil. Maintain the low boil, stirring occasionally, until the juice has reduced to half it's volume. Whisk the reduction into the mayo, brown mustard, olive oil and black pepper.
