I love that it is finally getting warm enough to grill frequently! Although, in the past several weeks I have done the Wyoming thing and grill with snow on the ground. Sometimes a girl's gotta do what a girl's gotta do.
I like grilling. It makes me feel rugged.
Even though I do need my husband nearby so he can tell me when the charcoal is ready to go. I'm usually too impatient to let it heat properly.
Anyhow. Lamb chops. Yum!
You'll need about a pound of lamb chops. I used the sirloin chops because:
1. They were boneless.
2. The prettiest looking in the small lamb section of my grocery store.
But feel free to use whatever chops look good to you.
Now the secret to a good piece of lamb is garlic. Honest. Garlic and lamb are like peanut butter and jelly. You just do it.
I also gave the chops a good rub with kosher salt, pepper, and dried thyme.
Place the chops on a heated grill. Cook for 5-10 minutes per side, depending on how well done you like your meat. 5 minutes/side will keep the meat rare to medium rare and 10 minutes/side will result in medium well to well. Approximately.
Did I mention that I really like lamb? It's super tasty fresh from the grill.
Grilled Lamb Chops (Printable Recipe)
4 lamb chops
3 cloves garlic, minced
1/4 tsp. dried thyme
1/4 tsp. kosher salt
1/8 tsp. black pepper
Preheat your grill. Combine the spices together. Rub the mixture into the top and bottom side of each chop. Place the chops on your grill, cover and let grill 5-10 minutes per side. 5 minutes/side will keep the meat rare to medium rare and 10 minutes/side will result in medium well to well. Approximately.
Let the meat stand for 5 minutes before cutting into the juices don't run out. This will keep the meat moist and tender.
