Menu Plan for April 4 - 10

I can't believe we're already well into April. Geez.

To be perfectly honest, I had a hard time getting into menu planning for this week. Every so often I have weeks where I just feel uninspired when it comes to cooking. However, I know that if I plan the menu out, I'll be much better off at the grocery store (instead of running up and down the aisles a million times) and not a frantic mess at dinner time. With that in mind, I pushed through the "cooking block" and came up with this:


Breakfasts: Eggs, cereal, turkey bacon, fruit smoothies, and muffins.

Lunches: Soup, salads, sandwiches, hummus, and leftovers.

Sunday - Steaks, asparagus and roasted red potatoes

Monday - Turkey Chili.

Tuesday - Out

Wednesday - Lamb schwarma with baked sweet potato fries

Thursday - Roasted chicken with broccoli au gratin

Friday - Grilled fish packets with vegetables and bread.

Saturday - Homemade General Tso's Chicken and vegetable lo mein - Y'all should check out the awesome recipes on Tasty Kitchen!

    White enchiladas
    Cheesey Chicken bundles with broccoli
    Asian flank steak
    OUT
    Garlic Herb halibut
    French dips

    The General Tso's recipe looks good. I have a fav spicy chicken recipe but I'll have to see how this compares!

  3. I'm glad you pushed through your cooking block -- I get that too sometimes. That's when I pester my hubby for what he wants to eat ;-)
