I really like our little city. Especially in the Summer when it really comes alive and there's tons of stuff going on in the community. Like this weekend there's the Irish Festival, our Super Day (bounce houses galore, food, local vendor booths, etc), a couple big fundraisers, Tour de Prairie (100 mile bike race) and that's just barely scratching the surface.
However, there is one glaring problem with our little city. It sits at a elevation of over 6000 ft. above sea level. Making baking a challenge, to say the least.
Everything wants to fall and flatten here.
I've figured out through trial, error, tears, sweat, and frustration, how to make muffins, bread, and cookies. And thanked God that pies don't need to rise! However, I can't, for the life of me figure out how to make a decent from-scratch cake or batch of cupcakes. The mixes from the store work okay (I usually have to add extra flour to them) but sometimes a girl just wants to bake a "real" cake!
