Excuse Me

I forgot to post this recipe yesterday.

But I had a good reason for neglecting the blog! My mother-in-law came down for a visit and shortly after she got here we headed off to hit garage sales and Hobby Lobby fun. We scored some pretty sweet deals! I love a good garage sale.

Anyhow. Couscous is like the perfect side dish in the Spring and Summer because it is light but also filling at the same time. Also, since it can be served warm, at room temperature or cold, it's fantastic for picnics. A couple weeks ago I posted a recipe for Cilantro Pesto and Tomato Couscous. So good!

Near East contacted me and asked if I would try their new Toasted Pine Nut couscous and create a recipe for it. I happily accepted!



Mediterranean Couscous (printable recipe)
Serves 4

1 box Toasted Pine Nut couscous, cooked according to package directions
1 zucchini, chopped
1 large tomato
1 scallion, minced
1/2 c. grated parmesan cheese


In a skillet, drizzle a bit of olive oil. Heat over medium heat. Add chopped zucchini to hot oil. Sprinkle with salt and pepper. Saute zucchini until it is fork tender.

Add zucchini, tomato and scallion to hot couscous. Stir to heat through. Remove from heat and stir in parmesan cheese. Serve warm or chilled. Enjoy!
