I'm really excited about this week because on Wednesday, my daughter and I will be flying out to the great state of Tennessee to visit my family! I love spending time with my crazy family and on this trip I get to meet my brother's fiance and my tiniest nephew who was just born this Spring. Ah, good times.
Sunday - Grilled chicken, baked sweet potato fries* and steamed broccoli
Monday - Cheese Stuffed Shells*
Tuesday - Baked Chipotle Beef Taquitos with Cucumber Salad Wraps*
Wednesday - Saturday: I'll be in beautiful Tennessee!
I'm planning on freezing the leftovers from Sunday - Tuesday in serving size portions so later in the week, when my husband has tired of frozen pizzas and hitting up all the local cowboy BBQ joints, he can just pull something out in the morning before work and simply re-heat it when he gets home at night.
