Oven-baked Rosemary and Garlic Sweet Potato Fries

I know, I know. I just said last week that red potatoes are my go-to in the Summer. But sometimes a girl gets in the mood for something sweeter. Even if it goes against her seasonal potato plan. :)

In all honesty, I don't cook with sweet potatoes often because the husband isn't a huge fan. But he likes these fries so I cook them up every so often.

Start with two sweet potatoes. Cut them in half. Then slice each half in 1/2" strips.

Cut those strips in half to make the classic fries shape.

Grab some garlic and rosemary.

Some other time we'll discuss how that rosemary is pretty much the only thing doing well out of all the things I planted this Spring.

Slice up the garlic and remove the rosemary from it's stem. Place the sweet potatoes, garlic and rosemary in a baking dish. Drizzle with a bit of oil. Sprinkle with salt and a tiny smidge of cinnamon.

Roast in the oven at 425 for about 18-22 minutes or until the "fries" are tender. Toss occasionally during the bake time.

Sprinkle with a bit more kosher salt after they come out of the oven and enjoy!

Serves 4

2 sweet potatoes
4 garlic cloves, slice in half
3 tbsp. fresh rosemary
Tiny pinch cinnamon

Slice the sweet potatoes into fry shapes. Arrange in a single layer in a baking dish. Top with garlic, rosemary, salt and cinnamon. Drizzle everything with a bit of vegetable oil.

Roast in the oven at 425 for 18-22 minutes or until fries are tender.
