Simplicity

Okay, before you even read this post, I've got a recipe for you to check out. It's ridiculous. I've made it three times and each time had to restrain myself from eating more than I should. Luckily, there's always been a couple brothers or brothers-in-law to "heroically" save me by "taking care" of it themselves.

Anyhow, click on this link and check out the recipe. Chances are you already have all the ingredients so you can whip one up for tonight's dinner. Oh, and it's better than a molten chocolate cake...more gooey goodness to go around.


Because this week has been a crazy one for me and because sometimes simple is just the best way to do things, I'm sharing this easy Summery salad:



Grab two - three tomatoes, a cucumber and fresh mozzerella. I like getting the mozzarella that's been marinated in olive oil and either pesto or red peppers.

Slice up everybody - use about half of the mozzarella.


Then season with salt and pepper. Right before serving, toss with homemade croutons. It's yummy, fresh and filling. If you're vegetarian, you could totally have this be your entree.

Cucumber, Tomato and Fresh Mozzerella Salad (printable recipe)
Serves 4

2-3 tomatoes
1 cucumber
4 oz. fresh mozzarella (the marinated kind)

Homemade croutons

Slice tomatoes, cucumber and mozzarella. Combine in a bowl. Season with kosher salt and pepper. Toss with croutons right before serving (so the croutons don't get damp). Serve and enjoy!

  1. I do this but I add a bit of blanched/chilled asparagus, some fresh basil and a dash of balsamic vinegar. Yum!
