Happy First Day of Fall!

Today is a cloudy, windy and cool day here. I'm thinking somebody tipped the weather off to the fact that Fall has officially begun. Although, in a couple weeks I'm sure the weather will ignore the fact that it's Fall and I'll be wading through a foot of snow.

Such is life in Wyoming.

But it makes me really really really appreciate the couple weeks of Fall we get here.

Here's a cozy little soup recipe for you to make while you cuddle up with your family and drink apple cider.

In a large pot, combine chicken broth, tomato paste, purple onion and water. Stir to combine and heat to a low boil.

Add in pre-cooked chicken, artichokes, rice, spinach, basil, salt and pepper. Cook until the spinach as wilted down and the soup is heated through.


Btw, the candle is butterscotch spice scented. It makes me happy. :)

Tomato Chicken Artichoke Soup (printable recipe)
Serves 4-6

2 cans low sodium chicken broth
1 c. chopped purple onion
2 c. water
3 oz. tomato paste
1 1/2 tbsp. dried basil
1 3/4 c. cooked brown rice (or use whatever rice you have leftover)
1 small jar marinated artichokes, roughly chopped
2 chicken breasts, cooked and chopped small
2 c. spinach leaves, chopped

In a large pot, combine broth, onion, water, tomato paste and basil. Whisk to combine tomato paste into the broth. Bring to a low boil. Add remaining ingredients; stir occasionally until spinach is wilted and soup is heated through. 

Season to taste with salt and pepper. Enjoy!
