Soup's On!

I've been having writer's block today. Which is why today's post is happening now, and not this morning like usual. I did, however, get some Once A Month Cooking done. And got the oil changed on my car without them trying to convince me that the car NEEDS $300 worth of parts and whatnot. Which is a first for me. Seriously.

So I'll consider it a successful day. Who cares if I have homework to do tonight? Well, except for my professors but whatever.

Here's a recipe that uses up leftover roast beef and lentils. Besides lasagna, I like to change my leftovers to be something different. Makes it seem more like you worked really hard on dinner instead of popping leftovers in the microwave... 


Roast Beef Lentil Soup (printable recipe)
Serves 6-8

1 lb. cooked roast beef
2 c. cooked lentils
3 cans low-sodium beef broth
1 onion
2 carrots
2 zucchini
salt and pepper
 1 tbsp. harissa or chili powder
1 tsp. garlic powder

Chop onion, carrots and zucchini. In a large pot, combine all ingredients. Heat over medium heat until piping hot. Serve and enjoy!
