How's life going? Everything back to normal after the holiday funtivities? We're still working on it over here. I have a hard time bringing myself to take down the last of the decorations because winter seems so gloomy without a wreath here and there. :)
I recently asked on the Damn Good Food facebook page if there was anything in particular y'all wanted to see more of (or less of!) on here. I really appreciate all of you who gave me feedback. Sometimes your suggestions can launch a whole wave of culinary-related inspiration. Many notes have been scribbled on various scraps of paper - thanks to you! I just hope I can figure out where I put them all...
One of the ideas that came to me was a salad. Which is actually something I don't get the chance to eat very often because the husband isn't a huge fan and would rather eat roasted broccoli. Well, he would rather eat steak with a side of steak but whatever. In November the husband and I went to San Francisco for his firm's annual retreat and while we were there, we were served a salad with dinner one night. A salad that the husband didn't hate.
Which is pretty huge around here.
So! I decided to make a similar dressing for the salad (recipe for that coming later this week...probably Wednesday). It turned out fantastic and might be my new go-to. I'm nutso for a vinaigrette.
These are all the ingredients you'll need. Well and some black pepper. I always seem to forget at least one thing when I try to take ingredient shots. :)
All the ingredients go straight into the blender. I very roughly chopped the shallot and juiced the lemon. Everything else I just measured and dumped.
I love recipes like that.
Blend, puree, aerate, chop, emulsion. Pick your favorite setting on your blender and let it have at it for a minute or two - as soon as everything is well-combined, it's done!
That's all there is to it! Making your own salad dressing is so simple and easy. I never buy dressing at the grocery store because it literally takes a minute to make enough for 2 weeks.

Cilantro Shallot Vinaigrette
Yields about 3/4 cup
2/3 cup olive oil
3 tbsp. and 1 tsp. apple cider vinegar*
1/2 tsp. kosher salt
1/4 tsp. ground black pepper
1/4 tsp. garlic powder
1 medium shallot, chopped
2 tbsp. lemon juice
1/3 cup (about a handful) fresh cilantro
Pour all the ingredients into a blender or food processor. Blend for 30 seconds or until all the ingredients are combined.
Pour over your favorite salad and enjoy!
*(you can also use white wine!)
