People, I'm starting to get serious cabin fever. It happens every year about this time...probably because the snow starts flying in Wyoming about mid-October so after four months of it, you just can't help but feel a little cooped up.
So I'm pretending it's Summer! Feel free to pretend along with me and we'll both also pretend that we're totally normal and not the least bit weird, okay? Okay.

I saw a recipe for strawberry avocado spinach salad on Pinterest (of course) and about the same time the husband shared with me a link to an article about surprisingly spectacular food pairings. One of which was strawberries and jalapenos. I've got big plans to make spicy strawberry jelly this summer (dream big, little pig! my munchkin loves that book). For now, I decided to play it safe and just made a strawberry avocado salsa.
And good news! I loved it.
It's sweet, spicy, creamy, fresh and everything that a good salsa should be.
I ate mine with some cinnamon chips but you could also make pita chips or toast up some baguette slices. Both would be lovely.
Now let's keep hoping for warmer weather! Never mind the snow blowing outside my window as I type this. :)
Strawberry Avocado Salsa
Yields about 1 1/2 cups
1 cup sliced strawberries
1 tbsp. lemon juice
1 jalapeno, seeded and minced
1/8 cup chopped cilantro
1/8 cup minced purple onion
pinch of salt
Peel and chop the avocado. Toss in a bowl with lemon juice. Add strawberries, jalapeno, cilantro, onion and salt. Stir everything together. Serve with tortilla chips, pita chips or toasted baguette slices.
